Since 2013 in Amagasaki, they’ve built their reputation by collaborating with highly skilled Japanese craftsmen who often stay behind the curtain. No signatures, no spotlight—just honest, high-level craftsmanship.

This one-of-a-kind Nakiri comes from the Hikari line and is forged in SLD semi-stainless steel. Originally engineered by Hitachi for cutting other steels, SLD holds an edge incredibly well—very close to carbon performance—but without the same level of upkeep. It’s not fully stainless, but treat it right with a quick wipe and dry, and it’ll stay looking sharp.

Where the Hikari series really stands out is in its grind. These are true lasers—thin behind the edge, light in hand, and incredibly precise. The soft, hazy finish paired with a subtle lamination line gives the blade a clean, refined look without trying too hard.

But this one… this is where things change. We built this piece in-house with a mono stabilized wood handle that brings serious punch. Bold color, deep contrast, and a flow that cuts right through the blade’s hazy finish. It doesn’t try to match—it elevates. The result is a striking balance between understated steel and a handle that commands attention.

And like everything we assemble at Kakushin—this is a true one-off. No copies, no second run.

On the board, the Nakiri is all about efficiency. Tall profile, flat edge—perfect for push cuts and straight chopping. Vegetables, herbs, dense produce… it just flies through prep with clean, controlled cuts and tons of clearance.
